On its Way: Curried Butternut Squash Soup with Coconut Milk




You guys. I've held my new cookbook in my hands and I'm in love. Seeing all of the words and photos and recipes come to life in this beautiful hardcover beauty has thrilled me to my core. I'm so happy that Vegetables: A Love Story is beginning to find its way into your kitchens and hearts. The official publication date is just over a week away (October 12th), but I've delivered many preorders to those who've ordered directly from me in Saskatoon, and even sent some copies as far away as Montreal and Vancouver. If you've been following me on social media, you've watched the progress of the book unfold. It's been a journey, that's for sure! I'm simply over the moon that Vegetables: A Love Story is on its way, out into the world, from my kitchen to yours.

Blueberry Ginger Smoothie and Stuff I've Been Meaning to Tell You



I feel like it's been forever since I've sat down at the computer and just wrote to you guys.  As you can imagine, there's been a whirlwind of activity around here for the past 6 months, and I finally have a few quiet hours to chill in the morning light and just say hey.  The manuscript for my cookbook is in the hands of the publisher and very soon I'm going to get the edits back then the whirlwind of activity will resume - except this time I'll also be working a few days a week at my pastry chef gig and the phrase "how am I going to do it all?" flits in and out of my mind on a loop.  But, as they say, we shall cross that bridge when we come to it.

On My Way: Coconut Cream Overnight Oats & Lentils



You guys.  Working from home is the best.  I've been doing so "officially" now for just a few days, and already I'm in love.  I can rise at a reasonable hour, have tea while catching up on the morning news, and work away at my computer wearing stretchy pants and my favourite sweatshirt from 1993.  Breaks consist of taking coffee outside while the cats run up trees and then I rake the last of the leaves, just to get a little physical activity in.   I think I might be loving breakfast the most, as it can consist of something more substantial than the yogurt and fruit I used to cram in before I left the house at an ungodly early hour.

Coconut Chia Pudding with Bluberry Ginger Compote

Well my friends, we made it.  Another winter finished and into the books.  I know, I know, there's still snow on the ground and flannel sheets are still on the bed, but for all intents and purposes, spring is here.  Hallelujah praise the lord.  And I just did a few jumping jacks, scaring the bejeezus out of the cats.  Spring is my most favourite season.  I love the whole reassurance and resurgence that comes with it.  Just like the blades of green beginning to poke through the earth, so do new ideas, dreams, intentions and goals.  Not only is it the equinox today, but a super moon and a solar eclipse.  There are good things happening up there in the cosmos and timing couldn't be better for a little system restart.  What do you want to do with all of this rebooting energy swirling around you?

Mocha Medjool Date Cake with Dark Chocolate Ganache



It’s that time of year when visions of sugar plums start dancing in heads.  Lists are being made on a daily basis and If you’re at all like me you’ve started thinking about desserts to serve for the upcoming holiday season.  Well, to be honest, I think about dessert all of the time, but especially at Christmas.  You want a showstopper.  And today, I have that for you, with a little help from the friendly (and delicious) Natural Delights Medjool date.  And, believe it or not, but this cake is completely vegan, and can easily be gluten free, too.  This is a great recipe to have on hand when guests with special dietary restrictions will be seated at your table.  Rather than having various desserts to accommodate this or that food issue, everyone can partake in this cake. They may even lick their plates.

DIY Takeout: Slow Cooker Butter Chicken



It's melting!  It's melting!  You guys.  It finally feels like the longest winter ever is leaving us.  This has me pretty excited, in case you hadn't noticed.  I'm splashing around in my blue rubber boots,  the windows are open and I'm even excited to tackle spring cleaning.  Seriously.  What has come over me?  While cleaning out the cupboards I spied my little slow cooker looking lonesome in the dark corner.  I was also craving Indian food, thus a recipe was born.  Also, why don't I use the slow cooker more often?  It's makes dinner prep so easy.  Maybe I just need to clean my cupboards out more often (says the voice of my mother).  Right.

Curried Cauliflower & Lentil Soup with Winter Pesto

Indeed, Mr. Steinbeck.  By all accounts I deserve a very sweet summer, given the extended cold snap that made me grimace and curse and contemplate moving to warmer climes.  It was the kind of cold that chills straight to the bone, that freezes exposed flesh in a few minutes, that stalls cars and builds character.  March definitely came roaring in like an angry Lion, but apparently on the weekend temperatures will be hovering around zero (zero!!!) which means the shedding of layers and bad attitudes is about to begin.  Just goes to show if we wait long enough, there is a reprieve to the suffering; that light will triumph over darkness and hot damn I can put away the lady longjohns for another year.

Time Out: Raspberry Dark Chocolate Coconut Scones



Life around here has been pretty nutty - what with me working 40+ hours a week at a job that I adore, but is incredibly busy and some days physically exhausting.  Add onto that a new writing gig I'm pretty stoked about and a tangled/overgrown garden/yard that is starting to look like some sort of prairie jungle, and let's just say I've got lots on my plate.  Or as my mom would say, too much.  Throw into the mix that fact that I never took any sort of summer vacation, (perils of starting new job in summer) and the outcome of all this craziness is that something has to give.  And you probably can tell what's coming, and I really hate saying it, but it's this space.  I have to step back for bit and take a breather.  A time out, if you will.  For the past two and a half years I've loved loved loved coming here at least once a week and telling you what the heck I've been up to in my kitchen.  I really have.  But lately it's been the last thing on the list of stuff that needs to get done and I feel badly for that.  Don't fret - I'm not going away for ever.  Never!  I'm only hoping to take about a month off to refresh, re-assess and relax.  Some days I would like to not even turn the computer on (imagine!!!) and park myself on the couch and watch three episodes in a row of Homeland and stuff my face with popcorn.  Plus, these summer days are waning, so fast, and I'd like to suck up their essence before it's too late; see more of my friends and family, go for hikes by the river.  Maybe even contemplate dating again.  I think this is called a social life.  Anyway, you get my drift.  You won't get rid of me that easily though, for I'm sure I'll be popping in briefly with a recipe and a photo or two - because I really do love it here and you know I'm still going to be cooking fabulous food.   Just not sure when I'll be back at full steam - I'm guessing once the garden is put to sleep and I've got a game plan on how to handle all of the blessings in my life, because all of this that is happening is so, so good, and I'm grateful for every second of it.  Thank you so much for understanding. I miss you already.

Grilled Thai Turkey Salad Rolls with Enoki Mushrooms & Peanut Sauce

Flourless Banana-Chocolate Pudding Cakes with Whipped Coconut Cream



Sitting here, on this quiet Sunday evening, I find myself a little stuck for words.  No, nothing horrible has happened (yippee!) in fact I'm on the cusp of something fantastic (I think!), though I don't want to spill the details just yet.  Superstition and all that.  And no, it doesn't involve a boy.  This will continue to be a boy-free zone for a good while longer, though I can't remember the last time I shed a tear over the man who was so reckless with my heart.   I'm guessing that's a good sign the heart is in repair, ready for it's final tune-up.  Time really does have magical healing properties, doesn't it?  As does chocolate.  Both work wonders, in their own way.  No.  Good things are around the corner, I can feel it.  Stay tuned for future developments.  In the meantime, today I bring you banana-chocolate pudding cakes and a wee adventure on whipping coconut cream.  Let's dive in, shall we?

Pinch Me: Curried Carrot Soup with Coconut Shrimp



Where do I begin?  This week has been insane - but in the best way.  On Friday I found out I won for Best Main Dish in the Canadian Lentils Recipe Revelations Contest.  Remember that Lentil & Chickpea Curry with Coconut Milk?  That was the winning entry!  Lucky, indeed.  Thank you so much to Canadian Lentils for the recognition.  I'm super pumped, and that Amazon gift card is going to be put to good use:  new chef's knife, maybe an ice cream maker because I keep whining that I don't have one.  And books.
