Snacktime: Apple Crostini with Whipped Ricotta

If your house is like my house, snacktime is important. Whether it’s a second breakfast around 11 am or a bedtime snack around 11 pm (I’m a nightowl), I like a little something to nibble on while I work or binge watch a current favourite show (lately, it’s Broadchurch). These crostini made with Cosmic Crisp Washington Apples fit the bill perfectly. Toasted slices of baguette are slathered with a whipped ricotta spread, then topped with crisp and sweet slices of Cosmic Crisps, drizzled with honey and garnished with toasted walnuts.

California Dreaming: Roasted Peach and Ricotta Focaccia

With summer months and months away, this is the time of year when I start to daydream about wearing flip flops, eating burgers outside in the shade and hearing thunder rumble off into the distance. Alas, my reality is feet in slippers, stew for supper and freezing rain being the crazy menace that it is. Oh, a girl can dream. When it comes to eating fruit, California Cling Peaches bring me a little taste of summer in the dead of winter. Easy to find on the store shelves, and affordable as all heck, canned peaches have no preservatives and according to a study by the Linus Pauling Institute at Oregon State University, canned peaches are higher in antioxidants and Vitamin A and are nearly four times higher in Vitamin C and 10 times higher in folate than fresh peaches. Healthy and tasty, I love opening a can of these beauties.

Turkey Lasagna with Ricotta & Basil



Hey you guys.  How are things in your neck of the woods?  Just popping in today to say hey, and also to tell you about this crazy good lasagna I made over on the Turkey Farmers of Canada website.  I'm so proud to have partnered with them, so stay tuned for more yummy things turkey coming your way.  While this recipe is made to be kid-friendly, rest assured the adults in your household will likely love it equally.  I added in a little baby kale for extra nutrition, who in their right mind doesn't love basil?  Hop on over here to get the full recipe.  Okay, back to regular summer programming, i.e. the raspberry patch that needs picking, lawn mowing and general sloth-like behavior afterwards.  I'll pop in soon with a summer salad that I can't stop eating.  Until then, enjoy these late summer days.

A Good Year: Roasted Grape & Ricotta Crostini



I hope everyone has had peaceful yet super fun holidays.  Me and my mom slipped away to the country to visit my sister and her family and it was a blast.  It's been a long time since I played hide & seek for a good hour.  Funny how you can hide in the same spot and little kids still think you're the best.  "Auntie, where are you?" still rings in my head and warms my heart.  It was great being away, and the scenery was just gorgeous - some of my photos are at the end of the post.  Happily the cats didn't burn the house down and were quite glad to see me to have their food provider back again.
