Bison & Bean Stew with Wilted Swiss Chard
I love to eat bison. Like, a lot. If it's on a menu, my eyes light up and I get really excited. I've always enjoyed its rich, slightly sweet, robust flavour, that's not at all wild or gamy. But, I've never really cooked it much at work, or at home. So when the offer came to review Jeniffer Bain's new cookbook Buffalo Girl Cooks Bison, I jumped at the chance. Jennifer is the food editor and columnist for the Toronto Star, who happens to also be married to a bison rancher in Alberta. She divides her time between the big city and the ranch, and over the past several years has come to love the majestic herbivore. She's on a mission to convince everyone to love bison meat as much as she does. This cookbook is a grand beginning.

Swiss Chard & Corn Pizza with Cherry Tomatoes and Basil

Thanks for letting Lucy Maud cover for me today. My mind is elsewhere - mainly on the summer produce that needs picking just outside my door. Beans aren't gonna blanch themselves! Plus this week has been heavy with deadlines and work, and I'm just tying up a few loose ends before I head out of town for a bit. Finally my mini-vacay is here! Not venturing far - just jumping in the car and going to see some of my favourite people in the whole world; key players in some of my never-to-be-forgotten-summers. It feels like eons since I've hit the road; windows down, music loud, with just the horizon to drive into. Well, let's rephrase that. I hate hair in my eyes, so the windows are up. Music is loud, but not that loud (I'm old after all), and I'll be squinting while driving into the sun. But it's my road trip, dammit, and it's gonna rock.
And so my going away present to you is this pizza - a great way to use up the ample amounts of chard you may be finding in your CSA or gardens right now. Cooked with leeks, fresh corn and garlic, it makes a mighty fine topping. Those cherry tomatoes are sweet like candy and really match perfectly with the fresh basil. I had bocconcini to use up, but go ahead and use goat cheese or feta as a replacement. It's pizza, so feel free to play around. Use caramelized onions instead of leeks or kale instead of chard. I won't look away if you add bacon either. Might even give you a high-five. If you serve it with a little balsamic reduction drizzled on top - well that gets you a fist bump.
And with that, I'm gone like the wind.
Swiss Chard & Corn Pizza with Cherry Tomatoes and Basil
I used the same crust I used here. It was even frozen for more than a month and still perfect.
Rolled out to about 9x13 inches, it proved to be a great base. That being said, feel free to substitute your go-to crust.
2 tbsp butter
1 tbsp olive oil
2 cups sliced leeks, be sure to rinse them well
2 cloves garlic, minced
1 tsp chili flakes
6 cups Swiss chard
1 cup fresh or frozen (thawed) corn kernels. Leftover corn on the cob would be great too.
1 tsp salt
1 1/2 cups shredded mozzarella
2 cups fresh cherry tomatoes, cut in half
100 grams bocconcini cheese, sliced
handful fresh basil leaves, torn
Roll out your crust so it's roughly 9 x13 inches. Grease a bake sheet with olive oil and sprinkle a little cornmeal on top. Place the rolled out dough on top of this. Preheat oven to 450*F.
Heat butter and oil in a deep skillet. Saute the leeks until softened and starting to brown, about 10 - 12 minutes. Add the garlic and chili flakes and cook another minute. Stir in the chard and corn, cooking until chard is wilted and corn warmed through - about 3 minutes. Let cool a few minutes - slice your cherry tomatoes and cheese while it is cooling. Sprinkle the shredded mozzarella on top of dough. Spread the chard filling on top of this. I had about a cup extra which I saved for sandwiches later in the week. Arrange the cherry tomatoes and bocconcini on top of the chard filling. Slide into the preheated oven and bake for about 20 minutes, until golden and melty. Scatter fresh basil leaves on it once out of oven. Slice into wedges. Serves 3-4.

It's true though, isn't it? How long have we waited for the warm summer breezes to wash over us and carry away our worries and general maladies? Now that we are in the throes of this most glorious time of year, I hope you are indeed wearing less clothing and generally feeling quite awesome. Today we delve into the archives for a little summertime fun and food. It was quite the trip to pick my favourite foods to eat while wiping away sweat from the upper lip. Look how much my photos have changed! We've come a long way, baby. Thanks for taking a trip down memory lane with me. I'll be back in a few with a brand new post. I made cake! And there may or may not have been milk chocolate ganache involved. Believe me, you don't want to miss it. Until then, happy 4th of July to my American friends, and don't forget the SPF.

Runneth Over: Swiss Chard & Heirloom Tomato Tart
Holy cow these are busy busy times. My garden is running over with goodness, the veg doing their thing and growing crazy fast and furious and making me wonder, yet again, why the heck I planted for a family of 12 when there is just me and my handsome man to feed. But we'll eat loads of it fresh, then preserve the rest. I'm almost a little afraid to go out and check the beans because I know they'll be out. of. control. and some massive blanching/freezing will have to ensue in the next day or so. If you are bored and/or want a bag o' beans, come on by - I can use the help :) Speaking about out of control, my chard has gone bonkers crazy productive, and I know I'm not the only one. A funny thing happened last week. Within a matter of minutes two friends, from different provinces, one in real life face to fave convo, and the other via Instagram

Baked Rigatoni With Sausage, Ricotta and Swiss Chard
Sometimes I find inspiration for meals in the oddest of locales. There I was, minding my own business in Superstore. (For those not in the know, Superstore is a huge grocery store chain in Canada, with their own cheap and cheerful clothing line, housewares, and other big box store stuff. They don't sell tires though.) I sauntered down the housewares aisle, just for fun. I love all things kitchen. I could spend hours examining pots and bowls and wooden spoons and vegetable peelers. Kitchen stuff is my crack. Good thing my little green kitchen is tiny so my habit is fairly under control - until I find something I must have this very second. Like this new line of stoneware Superstore has in stock now. I found the most perfect red baking dish. It's deep, like 3L deep, with nice high sides. But really, it's the red that got me. And the price. $17.99!!! Deal of the day.
Cooking time: 50 minutes
Makes 6 servings
454g Barilla Rigatoni
sauce:
1 Tbsp canola oil
500g good quality Italian sausage, mild or hot
1 medium onion, chopped
2 cloves garlic, chopped
1 Tbsp chopped fresh thyme
1 Tbsp chopped fresh rosemary
1 tsp dried oregano
pinch of hot pepper flakes, or more
few glugs of red wine
1 796 ml can crushed tomatoes
small handful of cherry tomatoes, cut in half
1 Tbsp honey
salt and pepper to taste
filling:
1 500g tub of ricotta cheese (not low fat)
1 egg
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil
pinch hot pepper flakes
1 small onion, chopped
1 clove garlic, chopped
1 Tbsp olive oil
1 bunch Swiss chard, chopped
salt and pepper
3 cups shredded mozzarella
- Cook the pasta in a large pot of boiling salted water until it's still a little firm (about 7 minutes) - it will cook more in the oven. When cooked, drain, and set aside.
- To make the sauce, heat a large saucepan over medium high heat. Add the oil. Squeeze the sausage out of the casings, and cook until no longer pink inside, breaking up with a wooden spoon. Add the chopped onion and garlic, herbs and red pepper flakes. Cook until the onions are translucent.
- Add the glugs of wine, if you wish, let reduce for a bit, then add the crushed tomatoes, cherry tomatoes, honey and a little salt and pepper. Bring to a boil, stirring, then reduce heat to medium-low and simmer for about half an hour, stirring now and again. Adjust the seasonings.
- In the meantime, in a large bowl, mix together the ricotta, egg, Parmesan, basil and red pepper flakes. Heat a medium skillet over medium-high and add olive oil. Sauté the onion until translucent and then add the chard. Cook until soft. Let cool a bit, then add to the cheese mixture.
- To assemble: in a large, deep 3L casserole dish, lay down some sauce, then half noodles, then the ricotta filling, then remaining noodles, remaining sauce and finish with the mozzarella. Bake until cheese is bubbly and golden, about 25 minutes. Let sit 5 minutes before cutting into. Serve with crusty bread and a big salad. Makes lots for 6.
