Honey Chipotle Roasted Fish Tacos with Peach Salsa

My Instagram feed is currently flooded with folks frolicking on tropical beaches, 
and I have to admit I’m a little jealous. Clad in slippers and wool, I stare out onto a 
snow-covered front yard, and the only things frolicking are the brave birds, happily 
eating up the food I put out for them. How I wish I could trade in my boots for sandals, 
my shower for a swim-up bar, and the snow for some sand. And, everyone seems to 
be eating tacos on their tropical vacations, which makes me crave the sun and the 
beach even more. Seeing as I can’t transport myself to a place where the cold doesn’t 
hurt my face, I made my own fish tacos with a delicious peach salsa and pretend 
there isn’t another month of winter left.

California Dreaming: Roasted Peach and Ricotta Focaccia

With summer months and months away, this is the time of year when I start to daydream about wearing flip flops, eating burgers outside in the shade and hearing thunder rumble off into the distance. Alas, my reality is feet in slippers, stew for supper and freezing rain being the crazy menace that it is. Oh, a girl can dream. When it comes to eating fruit, California Cling Peaches bring me a little taste of summer in the dead of winter. Easy to find on the store shelves, and affordable as all heck, canned peaches have no preservatives and according to a study by the Linus Pauling Institute at Oregon State University, canned peaches are higher in antioxidants and Vitamin A and are nearly four times higher in Vitamin C and 10 times higher in folate than fresh peaches. Healthy and tasty, I love opening a can of these beauties.

Just in Time: Honey Lime Peach Tart



Every time I look at the calendar I have to blink a few times.  Is it really September already?  Summer certainly gets a speeding ticket.  It seems like yesterday when I was putting the finishing touches on the cookbook edits and summer was waiting in the wings.  Today I'm wearing socks and on my third cup of tea.  Fall is in the air, but I'm not too keen to rush into the sweaters and scarves and pumpkin pie just yet.  There are 6 months of that to come.  For me, it's still ice cream and all of the seasonal fruit that I love so much.  Peaches, nectarines, Concord grapes, strawberries.  I can't even look at a pumpkin as long as these are still around!  I wait all winter for summer to come, so you better believe I'll hold on as long as I can.  But, I'm no fool.  The smell of fall is wafting around, and the first golden leaves are falling.  I do like these end of summer days, and can certainly feel a transition happening.  Most of our lives are spent in transition.  The sweet passing moments between the moments; the rhythmic flows between the words.  Let's love the transitions like they're destinations.  Let's put all the worries and stress aside and just appreciate how nicely the sun goes down. And how tasty that ice cream is.  And how good it feels to have the hand of someone you love holding your own.

Twelve Things You Need To Make This Summer





I've been scrolling through my recipe archives lately, and it's pretty neat to see how far I've come since 2011.  It's sort of like looking back at your high school yearbook and thinking oh god I really had glasses that big.  Oh, but there's some good stuff hiding in these archives.  I've pulled out some of my favourites that I know I must make this re-summer and thought you might be interested.  The next couple of weeks are busy busy - I'm road trippin' to see my mom and sis and sweet nieces for a few days, then heading over to Regina to meet up with other food writers from across Canada.  Canadian Lentils is hosting us for a couple of days - we'll be touring lentil fields, and a processing plant and having a hands on cooking demo with Chef Michael Smith.  I'm beyond excited!  I'll be seeing friends I haven't seen in a long time, and I get to show off my beloved prairie to them. A grand adventure is waiting to be had.  That's what summer is all about, right?  But before I leave I wanted to share these hot weather gems with you.  I'll be back with a new post in a couple of weeks.  In the meantime, Happy Canada Day to all my crazy Canucks and Happy 4th to my American pals.  Talk to you soon.  Renée xoxo

A Gift: French Toast Sandwiches with Peaches & Mozzarella



Summer is heaving it's last gasp this weekend.  I hope you all played hard and soaked up as much sun as possible.  The tan lines on my feet are fading and my nail polish is long scuffed off.  Mornings see me swaddled in scarves and I've even had to turn the furnace on once or twice.  I know, the horror.  But. The leaves and light are changing, making the world around me so darn pretty, and I think I'm ready now.  Letting go is always a bit prickly to bear, but knowing that good things come in its wake, well, you just have to have faith in that.  Each season we're hit with is a gift, and I'm happy to tuck this summer away.  But before I do.  There are still peaches left to sniff.

The Last Hurrah: Baked Peaches with Almond Crust



It has been a ritual of sorts.  Every Sunday, for the past several weeks, I head to the farmers market.  There is a fruit truck there, you see.  And it beholds soft, fuzzy peaches from British Columbia.  I place about 8 or so in a bag - and they are all for me.  The kind-looking woman at the checkout knows.  You like the peaches, she says.  I  nod.  And she nods too.  Yes.  They are good.   And when they get home, they won't last the week.  I typically let them ripen on the counter until they smell just about right, and their flesh gives a little.  Then I bite into one and let the juices dribble down my chin, arms.  Sometimes this happens while I'm hovering over the sink (and I promise, I never eat over the sink, but I can't help myself) or it happens while sitting under my favourite tree in the backyard.   It's a ritual of sorts that is slowly coming to an end, because as goes summer, as go the peaches.  These last days of summer are numbered; the crisp mornings and faint cry of the geese overhead tell me so.  Just like a reluctant lover, no matter how hard you hold on, goodbye must be said.  Oh, but it was fun while it lasted.

It's true though, isn't it?  How long have we waited for the warm summer breezes to wash over us and carry away our worries and general maladies?  Now that we are in the throes of this most glorious time of year, I hope you are indeed wearing less clothing and generally feeling quite awesome.  Today we delve into the archives for a little summertime fun and food.  It was quite the trip to pick my favourite foods to eat while wiping away sweat from the upper lip.  Look how much my photos have changed!  We've come a long way, baby.  Thanks for taking a trip down memory lane with me.  I'll be back in a few with a brand new post.  I made cake!  And there may or may not have been milk chocolate ganache involved.  Believe me, you don't want to miss it.  Until then, happy 4th of July to my American friends, and don't forget the SPF.
