Sweet and Spicy: Pepperoni Pizza with Basil and Honey

You guys. I just made the best pizza. I know, I know, we all think we make the best pizza, but this really is the tops. I mean, just look at it! The golden, chewy, whole wheat crust, saucy sauce, basil pesto, loads of mozzarella - fresh and shredded, thinly sliced jalapeno pepper, heaps of pepperoni, fresh basil leaves that I grew myself, and a good drizzle of honey. If you like your pizza with a bit of heat and sweet, then this recipe is for you. Skillet Mushroom Lasagna with Greens and Mozzarella

Hey all!  I'm hanging out with the fine folks at Mushrooms Canada again. I love it when they ask me to be a guest over on their blog, as mushrooms are pretty much a staple in my kitchen and I look forward to developing delicious recipes featuring this beloved fungi! 

Everyone loves a good lasagna, and this one cooks up in a cast iron skillet in no time. While the noodles are par-cooking, simply make a basic cream sauce, and stir in a little Dijon, cayenne and nutmeg. Mushrooms love those flavours! Sliced cremini mushrooms are cooked in a bit of butter with another good friend – garlic. Stir in your favourite baby greens and cook just until they are wilted. Wipe out the skillet and lightly grease it with some canola oil. Layer in the sauce, noodles, mushroom mixture and top with more cheese. It cooks quickly in a hot oven and has a short stint under the broiler to get that ooey gooey cheesy crust. Served with a side salad, it’s fancy enough for company, and simple enough for a weeknight family meal. Find the recipe over on the Mushrooms Canada Blog

A Gift: French Toast Sandwiches with Peaches & Mozzarella



Summer is heaving it's last gasp this weekend.  I hope you all played hard and soaked up as much sun as possible.  The tan lines on my feet are fading and my nail polish is long scuffed off.  Mornings see me swaddled in scarves and I've even had to turn the furnace on once or twice.  I know, the horror.  But. The leaves and light are changing, making the world around me so darn pretty, and I think I'm ready now.  Letting go is always a bit prickly to bear, but knowing that good things come in its wake, well, you just have to have faith in that.  Each season we're hit with is a gift, and I'm happy to tuck this summer away.  But before I do.  There are still peaches left to sniff.

Turkey Lasagna with Ricotta & Basil



Hey you guys.  How are things in your neck of the woods?  Just popping in today to say hey, and also to tell you about this crazy good lasagna I made over on the Turkey Farmers of Canada website.  I'm so proud to have partnered with them, so stay tuned for more yummy things turkey coming your way.  While this recipe is made to be kid-friendly, rest assured the adults in your household will likely love it equally.  I added in a little baby kale for extra nutrition, who in their right mind doesn't love basil?  Hop on over here to get the full recipe.  Okay, back to regular summer programming, i.e. the raspberry patch that needs picking, lawn mowing and general sloth-like behavior afterwards.  I'll pop in soon with a summer salad that I can't stop eating.  Until then, enjoy these late summer days.

Tomato Basil Salad with White Beans & Bocconcini



Do you ever have those days when you don't know what in the world you are going to feed yourself?  I see your heads bobbing up and down so I'm going to take that as a yes.  Lately I've been having plenty of those glassy-eyed glances into the refrigerator.  Chalk it up to a new gardening season going at full throttle and other fun extra-curricular activities occupying a good chunk o'time.  And then there are those days when I just. don't. want. to. cook.  There I said it.  I make a living feeding people and some days I find it hard to muster the energy to feed my own belly.  It's ever-so-tempting to stop by the pizza place on the way home, but I'm cheap take-out is expensive and I'm picky often not very good.  My well-stocked pantry and refrigerator save my bacon many a day, and before I know it a delicious salad like this comes together in under 15 minutesEasy.  And right now easy is good.

Best of You: Caprese Salad



Oh Summer.  It looks like the time has come for you and I to part ways.  It's always such sweet sorrow when we have to say goodbye; you stay away much too long.  I'm sorry we never had that much time together; me busy working too many weekends, so busy I never got the chance to dip my toes in a lake or go on a picnic or drive down dusty country roads.  It wasn't all bad though - remember those glorious, early summer days in Ontario, when we got lost in Detroit and I ate at Lynn Crawford's restaurant?  Yeah, that was fun, and who can forget the trip my handsome man and I took to Moose Jaw?  Yes Summer, you were fleeting, but you were savoured.  Every bit.
