Reading about your frustration with the whole process of kneading etc. may I make a suggestion?<br />A few weeks back I came upon a recipe for 'crusty bread' at a site called simplysogood and I encourage you to take a look. For years I have used a bread maker, choosing the dough cycle and then forming loaves,buns, pizza dough etc to bake in the oven. However, since trying this new method, I am converted. It is so easy and the bread is amazing, particularly the crust!
